  • YOU WILL NEED:

    EGG: 1

    MILK OR BUTTERMILK: 3/4 Cup (180 ml)

    BUTTER / MARGARINE: 2 Tablespoons (30 g) MELTED

  • OVEN DIRECTIONS:

    1. PREHEAT oven to 425˚F (220°C - Gas Mark 7).

    2. COMBINE mix and ingredients above; stir thoroughly.

    3. POUR batter into a well oiled 8 inch (20 cm) baking
        pan, iron skillet, corn stick mold or muffin tin.
        If desired, non stick cooking spray may be used.

    4. BAKE 0 - 25 minutes or until golden brown.
        15 - 20 minutes for corn sticks / muffins. Immediately
         remove baked bread from pan, serve and enjoy.

  • TASTY VARIATIONS:

    Before baking, add to batter 3/4 Cup (170 g) cooked
      ground beef or sausage along with 1 Cup (220 g)
      shredded cheddar cheese.

    Before baking, add to batter 1 Cup (220 g) of
      your favorite chopped vegetable.

    Before baking, add to batter 1 Cup (220 g) of
      your favorite chopped meat (cooked).

    Crumble cornbread into a bowl of milk for a southern
      cereal.

    Corn Pancakes – Combine 1 package of Calhoun
      Bend Mill Muffin and Cornbread mix, 1 Egg, 1/2 Cup
      (120 ml) milk, 1 Cup (240 ml) creamed style corn.
      Pour 1/4 Cup (60 ml) batter for each pancake onto
      pre-heated oiled pan. Flip pancake when bubbles
      start to form on outside edge of pancake. Cook
      until golden brown. Makes 8 – 10 pancakes.

    Serve with: Chili, Stew, Pinto Beans, Black-Eyed Peas, etc.
