Banana Crumble Muffins

Muffins:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large ripe mashed bananas
  • ¾ cup white sugar
  • 1 large egg
  • ⅓ cup melted butter
  • 1 cup chopped walnuts (optional)

Crumble Topping:

  • Calhoun Bend Mill Blueberry Crumble Mix
  • 1/4 cup melted butter

Directions:

  1. Preheat the oven to 350 degrees F. Grease a 12-cup muffin tray or line cups with paper liners. Combine dry ingredients first: flour, baking powder, baking soda, and salt in a bowl. Mix together and set aside.
  2. Combine wet ingredients second: mashed bananas, sugar, egg, and melted butter in a separate bowl and mix until well combined. Fold the flour mixture into wet ingredients and mix until smooth. Add walnuts if desired into batter. Spoon batter into the prepared muffin tray, filling each 2/3 full.
  3. In a separate bowl, combine melted butter with Blueberry Crumble mix. Sprinkle spoonfuls of crumble mixture over batter.
  4. Bake for about 25 to 30 minutes or until golden brown. Briefly cool muffins in the tray, then transfer to a wire rack to continue cooling.
  5. Enjoy!
