Ingredients:
Crepes:
🎂 4 eggs
🎂 2 cups of warmed milk
🎂 1 cup of water
🎂 1/2 teaspoon of salt
🎂 2 cups of flour
🎂4 tablespoons of butter
Crumble topping:
💙 Calhoun Bend Mill Blueberry Crumble Mix
💙 1/2 stick of butter
Filling:
🍓 3 cups of heavy whipping cream
🍓 1 block of cream cheese
🍓 1/2 cup of berry jelly
🍓 3 cups of powdered sugar
🍓 1 teaspoon of vanilla
🍓 1/2 cup of blueberries and 1/2 strawberries for the topping Instructions:
Crepes:
🎂 combine all the ingredients with a whisk
🎂 Heat a 9-inch pan on medium and add a small amount of oil the the pan
🎂 place 1/3 cup of the batter in the pan and tilt it in a circular motion to coat the bottom of the pan. Cook the crepe until the bottom is no longer wet (40 sec- 1 min) and flip and cook the other side.
🎂 set aside
Crumble topping:
💙 Combine Calhoun Bend Mill Blueberry Crumble mix and 1/2 stick of melted butter.
💙 stir until crumbly and set aside.
Filling:
🍓 Using a hand-held mixer, mix the cream cheese until softened. Add in the rest of the filling ingredients and beat until smooth. Set aside.
Assembly:
🥇 start with a crepe at the bottom and add a layer of the filling using a piping bag or a zip lock bag with a hole cut. Sprinkle some of the crumble topping. Add another crepe on top (you may have to push down on the crepe to make the filling below even. Continue with this process until you have used all your crepes. Top with the rest of the filling, crumble topping, and fresh fruit.
