Lemon Blueberry Bars

Lemon Blueberry Barsย 

Ingredients:
๐Ÿ’™ย 1 box of Calhoun Bend Mill Apple Crisp Mix (pick it
up at your local Walmart and other various stores)
๐Ÿ‹ 1/2 stick of butter
๐Ÿ’™ 2 egg yolks
๐Ÿ‹ 14 ounces sweetened condensed milk
๐Ÿ’™ย 1/2 cup lemon juice (fresh is best)
๐Ÿ‹ 1 cup fresh blueberries

Directions:
๐Ÿ’™ย Preheat the oven to 350 degrees F. Spray an 8ร—8
inch baking dish with cooking spray or use a non-stick
pan. Set aside
๐Ÿ‹ In your baking dish, combine the Calhoun Bend Mill
Apple Crisp Mix and the melted butter. Mix until the
buyer is evenly distributed. Press crumbs firmly into
prepared pan. Bake the crust for 10 minutes. Remove
from oven and allow to cool to room temperature. (For
a quick cool down, stick it in the freezer for 10 min).
๐Ÿ’™ย To make the filling, combine the egg yolks and
condensed milk in a medium bowl. Stir in the lemon
juice. Stir until mixture is smooth and begins to slightly
thicken.
๐Ÿ‹Gently fold in the blueberries. Pour the lemon
blueberry filling evenly over the crust. Bake for 15 to 17
minutes, or until just set.
๐Ÿ’™ Cool to room temperature, then chill in the
refrigerator for at least one hour before serving. Cut
into bars and serve. (This step could also be sped up
by putting it in the freezer to cool).
