Ingredients:
- Calhoun Bend Mill Apple Crisp Mix
- 4 tablespoons butter
- 4 sweet potatoes
- 3-4 slices of bacon, chopped
- 2 honey crisp apples, chopped
- 3 tablespoons freshly chopped sage
- 1/2 teaspoons nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cinnamon
- 4 ounces goat cheese
Directions:
- Preheat oven to 400 degrees F. Pokes holes in sweet potato with a fork, then wrap each sweet potato with foil. Place on a sheet pan and bake for 50-60 minutes or until potatoes are tender to the touch.
- Once cooked, unwrap and cut a slit in the middle of the potato. Allow for cooling.
- On a medium sized skillet, begin cooking bacon. Once fully cooked, drain bacon on a towel.
- Add chopped apples to the skillet with nutmeg and sage. Cook until soft and tender.
- Add bacon back to the skillet with apples and set aside.
- Once potatoes are cooled, but still warm begin removing the flesh into a separate bowl and mash. Add goat cheese, cinnamon, salt and pepper.
- Scoop potato mixture back into potato skins and top with the apple bacon mixture.
- Prepare the Apple Crisp mix according to the box directions. Toast the topping in the oven for 20 minutes then sprinkle over sweet potatoes.
