Cranberry Chocolate Chip Oatmeal Cookie with Cream Cheese Icing

You Will Need

Cookie: 

  • 1 package Calhoun Bend Mill Cherry Crunch Mix
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1 stick unsalted butter or 1/2 cup butter
  • 1/2 tsp. vanilla extract
  • 1/2 cup oats (Old Fashioned Oats)
  • 1/2 cup dried cranberries
  • 1/2 cup chocolate chips (Optional)

Icing:

  • 4-oz. cream cheese or 1/2 the cream cheese brick
  • 1 1/2 cup powered sugar
  • 1/4 cup softened butter
  • 1 tsp. vanilla extract
  • 3 Tbsp. whole milk

Directions for Cookie

  1. Best if using a stand mixer or electric mixer, combine crunch mix, flour, egg, softened butter, vanilla, oats, cranberries and chocolate chips in a large bowl.
  2. Spoon out cookie dough 2 inches apart onto baking sheet pan.
  3. Bake at 350° for 16 minutes.

Directions for Icing

  1. Using a stand mixer or electric mixer, add softened butter and cream cheese  and allow mixing for 2-3 minutes.
  2. Add vanilla extract and begin slowly adding the powered sugar. Scape sides of bowl if necessary. 
  3. Add milk to thin out the icing and drizzle over cooled cookies.
  4. Enjoy!
